364 – Couscous Shrimp Salad / سلطة الكسكسي والجمبرى
- 2 tablespoons fresh lemon juice
- 1 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper (to taste)
- A handful of finely chopped cilantro
- 12 large whole shrimps
- 2 cups cooked couscous
- 1 small tomato
- 1 small cucumber
- Canned corn
Step 1 – Preparing the Ingredients:
1- First let’s prepare all our ingredients. Before squeezing the lemon, roll it while putting pressure on it with your hands. This will help extract more juice from the lemon!
2- Next, slice and chop the tomato into small pieces.
3- Same with the cucumber, chop it into small pieces.
4- Then, get some fresh cilantro and finely chop it.
Step 2 – Cooking the Shrimp:
1- Now, let’s heat our grilling pan. Once hot, sprinkle salt on the pan then add the shrimps, whole, with head, peel, and everything –then sprinkle some salt on top of the shrimp. We are grilling the shrimp dry style, no need for oil, butter, or anything else. Just salt. It really brings out the flavors of the shrimp itself.
2- Grill on both sides, as soon as the shrimp gets a nice pink color remove from the grill. Peel the shrimp and cut it into small pieces.
3- Leave a few shrimp whole for decoration.
Step 3 – Making the Couscous Salad:
1- In a large bowl, add the lemon juice, olive oil, ground paprika, ground cumin, salt, and pepper. Mix well. These are the basic ingredients for making the famous Moroccan charmoula. Now, add the chopped tomato, the chopped cucumber, shrimp pieces, and some canned corn. Mix well.
2- Add the chopped cilantro, mix, taste, and adjust the salt and pepper.
3- Finally, add the cooked couscous – preferably hot.

4- Mix all the ingredients until they are all well coated with the charmoula spices.
5- Serve immediately, top with whole grilled shrimp, fresh chopped cilantro… et voila!!! .
