374 – Korean Beef Short Ribs (Galbi) Recipe / الجلبي – وصفة البيف الكورية

Ingredients :

  • 1 1/2 pounds (700 grams) beef short ribs
  • 1/2 onion
  • 1/2 kiwi
  • 1/2 apple
  • 5 garlic cloves
  • 1/4 cup (60 ml) soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon light brown sugar
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper
  • 3/4 cup water

Directions :

Step 1 – Soaking the Meat: 
1- Place the beef slices in a large bowl, cover with cold water, and let the meat soak for 30 minutes to remove blood and any meat after-taste.

Step 2 – Preparing the Marinade: 
1-  Peel and cut into chunks the 1/2 onion, 1/2 apple, and 1/2 kiwi.
2- Mince the garlice cloves.
3- Place all these ingredients in a food processor and mix until you get a smooth puree.
4- Pour the puree in a large bowl an add the soy sauce, brown sugar, the honey, sesame oil, black pepper, and water. Mix well with a spoon.

Step 3 – Marinating the Meat: 
1- Drain the meat from the water and place it evenly on a large pan.
2- Pour the marinade all over the meat. Cover the pan with a plastic wrap and place in the fridge for at least 3 hours before cooking the meat.
Note: if you want to marinate the meat overnight and cook it the next day, omit the kiwi from the recipe as the kiwi can over-tenderize the meat.

Step 4 – Cooking the Meat: 
1- Heat a grilling pan on medium heat.
2- Grill the meat on both sides until the outside is nicely browned. It should take 5-10 minutes.
3- Serve immediately with some rice and other side dishes.
