Ingredients :
- 1 bucket KFC whole chicken
- 1 can of black beans
- 3 cups pre-cooked white rice
- 1 onion, finely chopped
- 2 tomatoes, cut into small pieces
- 1 can of corn, drained
- 1 avocado, peeled and cut into thin slices
- 1/2 cup finely chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 100 ml sour cream
- 1 lime
Directions :
1- In a sauce pan, place the black beans and the liquid from the can. Add cumin and garlic powder to the beans. Bring to a boil and let it simmer for a minute or two. Stir in 2 tablespoons of cilantro and remove from the heat.
2- Separate the KFC chicken meat from the bones, and slice it into pieces.
3- In a large bowl, combine the pre-cooked rice, cooked black beans, chopped onion, tomatoes, corn, avocado, KFC chicken pieces, remaining cilantro, and a good amount of sour cream.
4- Mix all ingredients together, squeeze some lime juice and enjoy.
