487- Honey Madeleines / مادلين بالعسل
100 grams white granulated sugar
A pinch of salt
2 tablespoons of honey
150 grams unsalted butter
200 grams all-purpose white flour
½ teaspoon baking powder
1 lime or lemon
1- In a large bowl, whisk the eggs with the sugar and pinch of salt until well incorporated.
2- In a separate bowl, combine the honey and butter. Cover with a wrap and microwave for 1 minute or until the butter melts.
3- Add the melted butter-honey mixture to the egg mixture, little by little. Whisk constantly while adding the two. If you add the hot butter-honey mixture at once to the eggs, you will cook them because of the difference of temperature. So make sure you add the butter-honey mixture little by little and whisk at the same time!
4- Add the baking powder and sift the flour into the egg mixture. Mix well using a spatula until you get a smooth batter.
5- Place the batter in the fridge for 1 hour.
6- Preheat your oven to 220C / 430 F.
7- Fill the ¾ of each madeleine mold with the batter.
8- Bake the madeleines for 5 minutes. Reduce the heat to 180C / 360 F and continue cooking for another 10 minutes until the madeleines have a beautiful golden brown color.
9- Remove from the mold. Eat warm or at room temperature! Place in an airtight container and keep in the fridge for up to 10 days.
