503- Kefta Filling – حشوة الكفتة
250 grams (9 oz.) ground beef
1 medium onion, chopped
2 tablespoons finely chopped parsley
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon ground nutmeg
1 tablespoon vegetable oil
1 egg yolk (optional)
1- On medium heat, drizzle the vegetable oil in a pan. Add the chopped onion and cook for 5 minutes until the onion becomes translucent.
2- Add the ground beef, salt, pepper, and ground nutmeg. Cook for 10 minutes until the meat changes color from pink to brown.
3- Once done, add the chopped parsley. Mix well and cook for another 30 seconds.
4- Remove the meat mixture from the pan and place in a bowl. Let cool down for 10 minutes.
5- If you are using this filling in a way that does not require further cooking (to fill small bread for example), then use it as is. However, if you would like to use the filling to make Briwat, then add an egg yolk to the meat mixture and mix until well incorporated.
6- Let the filling completely cool down before using it as a filling with warka or phyllo dough.
