573- Saffron Tea / الشاي بالزعفران

Ingredients :

3 teaspoons of loose leaf green tea
1 generous of pinch of saffron
3 tablespoons of powdered sugar (to taste)
Boiling water

Directions :

1- Add the tea to a large teapot (which can be placed on the fire) and 8,5 oz (1 cup) of boiling water. Let rest for 1 minute.

2- Pour the water in the teapot into a cup and set aside. This tea water is called the “spirit of the tea”.

3- Add another cup of boiling water to the tea leaves in the teapot, swish around while rotating the teapot around, then pour the water into another cup. Throw away this water which was used to clean the tea. You will notice that the water is darker the second time.
4- Pour back the “spirit of the tea” into the teapot. Add boiling water to the teapot until it is three quarters full.
5- Place the teapot on low heat and bring the tea to a boil.

6- Remove the teapot from the heat and immediately add into the teapot both of the saffron and the sugar.


7- Mix all the ingredients by pouring the tea into a glass. Pour back the tea of the glass into the teapot.
8 – Repeat this step 2-3 times.
Serve immediately. While pouring the tea, hold the teapot very high above the glass to get the distinctive foam of Moroccan tea.
