577- Potatoes Salad / سلطة البطاطس
4 medium potatoes (450 grams / 1 pound)
2 garlic cloves, crushed
3 tablespoons olive oil
1 tablespoon ground paprika
1/2 tablespoon ground cumin
Juice of 1/2 lemon
Chili powder, to taste
Salt, to taste
A small handful of fresh parsley and cilantro, chopped
1/4 preserved lemon (optional)
1- Peel the potatoes and cut them into bite-size cubes. Place the potatoes in a pot, cover with cold water, and add 1 teaspoon of salt. Place the pot over medium heat, bring the water to a boil, then reduce the heat and cook the potatoes until tender. Drain the potatoes from the water and keep on the side.
2- In a saucepan over low heat, heat the olive oil. Add the garlic and cook for 1 minute.
3- Add the ground paprika, ground cumin, chili powder, and salt. Squeeze the lemon and add the juice into the pan. Mix and cook for 1 minute.
4- Place the potatoes in the pan. Gently mix in the potatoes so that every piece is coated with the sauce. Add the chopped cilantro, parsley, and salt. Mix and cook for 2 minutes. Serve the potatoes warm or cold with fresh cilantro on top.
