580- Roasted Pepper Salad / سلطة الفلفل المشوي

Ingredients :

4 medium bell peppers green, red, yellow, or mixed (450 grams / 1 pound)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon ground cumin
1/2 teaspoon salt, to taste

Directions :

1- Place the bell peppers on a baking pan covered with parchment paper. Place the baking pan in a preheated oven at 200°C / 400°F and roast the peppers for around 20 minutes. Turn the peppers and roast for another 20 minutes until the skin is charred and the peppers are soft. Place the peppers in an airtight container.

2- Let the peppers rest for around 10 minutes so they can steam. Remove the peppers one at a time from the container then seed and peel them.

3- Slice the peppers into strips and place them in a bowl.

4- Add the olive oil.

5- Add the lemon juice.

6- Add salt and ground cumin and mix. Serve warm or cold with crusty bread.
