581- Fava bean salad / فول مشرمل

Ingredients :

450 grams (1 pound) dried beans, soaked in water overnight
6 tablespoons olive oil
1 onion, finely chopped
1 fresh tomato, grated and skin discarded
1 green pepper, finely chopped
5 garlic cloves, crushed
3 tablespoons finely chopped cilantro
1 teaspoon lemon juice
1 teaspoon ground cumin
1 teaspoon ground paprika
Salt and pepper, to taste
1 litre water

Directions :

1- Heat the olive oil in a pan over medium heat, add the onion and cook for 3 minutes while stirring regularly using a wooden spoon.

2- Drain the beans from water and add them to the pan with the grated tomato, green pepper, garlic, cilantro, lemon juice, ground cumin, ground paprika, salt, and pepper.

3- Mix until well combined.

4- Cover the beans with water. Cover the pan and cook over medium heat for about 40 minutes until the beans are tender.

5- Place the beans in a plate and serve hot with crusty bread.
