594- Tostadas with Dates Jam and Ricotta / توستاداس بالتمر و جبنة الريكوتا

Ingredients :

200 grams of dates
1/2 red onion
120 millilitres orange juice
4 tablespoons olive oil
2 tablespoons honey
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
Salt, to taste
Pepper, to taste
1 baguette
150 grams of ricotta cheese
A small handful of chopped almonds

Directions :

1- Pit and cut the dates into small pieces and peel and finely chop the onion.
2- In a medium saucepan over medium heat, heat the olive oil, then add onion and a pinch of salt and cook for 3 minutes while stirring regularly.

3- Add dates, orange juice, honey, lemon juice and cinnamon.

4- Mix well, reduce the heat to low and cook for 15 minutes. Using a wooden spoon, stir regularly until the sauce reduces. Remove from heat and allow to cool.

5- Cut the baguette into slices and place the slices on a baking pan covered with parchment paper. Drizzle some olive oil on top and a pinch of salt and pepper.

6- Place in a preheated oven at 180°C / 356°F for about 10 minutes until the slices are lightly brown. After getting it out of the oven, allow to cool.

7- On each slice, spread some ricotta cheese and top with dates jam. Sprinkle with chopped almonds and serve immediately.
