Ingredients :

290 grams (2 1/2 cups) rolled oats
150 grams (1 cup) dates, pitted
150 grams (1 1/4 cup) apples, diced
180 milliliters (3/4 cup) milk
50 grams almond powder
2 large eggs
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
A pinch of salt

Directions :

1- Preheat your oven at 180°C (360°F).
2- In a bowl, place the dates and cover with boiling water. Set aside for 15 minutes. Drain the dates.
3- In a food processor, place the oatmeal and mix for 1 minute until you have a fairly fine powder.

4- Add dates and apple pieces and mix again for 1 minute until you have a paste that mixes and apples and dates are completely chopped.

5- Add milk, almond powder, eggs, cinnamon, baking powder, baking soda and salt. Blend for 2 minutes until you have a smooth paste.

6- Pour the dough into your muffin tin, filling them 3/4 full.

7- Bake for about 30 minutes until the muffins are cooked.
