652- Chocolate Cake / كعكة الشوكولاتة
3 teaspoons baking powder
200 grams (1 2/3 cup) flour
140 grams (2/3 cup) white granulated sugar
1 tablespoon unsweetened cocoa
150 milliliters (2/3 cup) vegetable oil
150 milliliters (2/3 cup) coffee, warm
Pinch of salt
150 grams (1/2 cup) dark chocolate, chopped
150 grams (2/3 cup) fresh cream
50 grams (1/4 cup) butter, at room temperature
50 grams (1/4 cup) white granulated sugar
Sliced almonds, toasted
Step 1: Chocolate cake
1- Preheat your oven to 180°C / 360°F.
2- In a large bowl, place the eggs and sugar. Using an electric egg beater, beat the eggs on high speed for 5 minutes until you get a thick whitish mixture.
3- Add the coffee and oil and continue beating for another minute until you have a smooth mixture.
4- Add the flour, cocoa, baking powder, and salt to the egg mixture and whisk all the ingredients until you have a smooth batter.
5- Butter a mold of 22 centimeter in diameter and cover the bottom and sides with parchment paper. Pour the batter in the mold.
6- Bake for about 45 minutes until the cake is done.
7- Let the cake cool down a bit then remove from the mold.
Step 2: Chocolate icing
8- In a saucepan, over medium heat, bring the fresh cream to a boiling point.
9- Place the chocolate in a bowl, pour over the hot cream and let it sit for a few minutes. Using a whisk, mix until it melts.
10- Add the butter and mix until completely incorporated.
Step 3: Final Steps
11- Once the cake has cooled down a bit, pour the chocolate icing on top and even out with a spatula. Decorate with toasted sliced almonds.
