659- Green Peas and Mint Soup / حساء البازلاء بالنعناع
500 grams peas
1 onion, finely choped
2 garlic cloves
15 mint leaves
1/2 teaspoon of salt, according to taste
1/2 teaspoon of pepper, according to taste
750 ml of vegetable broth
2 tablespoons olive oil
1- In a large saucepan over medium heat, heat the olive oil. Add the onion, garlic, salt, and pepper and cook for 3 minutes, stirring regularly with a wooden spatula until the onion becomes translucent.
2- Add the green peas, the potato cubes, and the mint. Cover with the broth.
3- Bring to the boil, cover the pot, and cook for 20 minutes until your vegetables are tender.
4- Drain the vegetables by keeping the cooking water, place them in a bowl, and using a blender, mix until you have a smooth texture.
5- Add the cooking water little et the time while mixing until you reach the desired consistency.
6- Put back in the saucepan, bring to a boil for 2 minutes, and serve immediately.
