Ingredients :
For the burgers:
400 grams (14 oz.) canned chickpeas
1 medium carrot, peeled and grated
1 zucchini, grated
1 garlic clove, grated
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon coriander powder (optional)
2 tablespoons chopped fresh parsley
1 tablespoon whole wheat flour
Salt and pepper, to taste
Olive oil for cooking
For the yogurt sauce:
125 grams (1/2 cup) unsweetened plain yogurt
2 tablespoons lemon juice, freshly squeezed
Salt and pepper, to taste
Directions :
Step 1: Preparing the chickpeas burgers
1- Drain and rinse well the canned chickpeas. Make sure to keep the chickpea water for other recipes.
2- Place the chickpeas in a food processor, add the grated garlic, cumin, paprika, salt, pepper, coriander powder, and mix coarsely all the ingredients.
3- Using an absorbing cooking paper, squeeze the grated zucchini to remove the excess of water.
4- Put the chickpeas mixture in a large bowl. Add the carrot, zucchini, fresh parsely, the whole wheat flour, and mix using a spatula until the mixture is well combined.
5- Divide the chickpea mixture into 12 equal portions and shape into small patties. Refrigerate for 30 minutes.
6- In a large pan over medium heat, heat the olive oil, and cook the chickpeas patties for 3 minutes on each side.
7- Remove the chickpeas burgers from the pan and place them on a piece of an absorbing cooking paper to remove the excess of oil.
Step 2: Preparing the yogurt sauce
8- In a small bowl, add the unsweetened plain yogurt, lemon juice, salt, and pepper, and mix well with a spatula until well combined.
9- Serve the veggie chickpeas burgers warm with the yogurt sauce and a salad.
