Ingredients :
For the salad:
400 grams (14.1 oz) spring mix
300 grams (10.5 oz) watermelon
200 grams (7 oz) yellow cherry tomatoes
100 grams (3.5 oz) red cherry tomatoes
1 small red onion, cut into thin rings
200 grams (7 oz) mozzarella cheese, cut into medium cubes
100 grams (3.5 oz) roasted walnuts, roughly chopped
For the sauce:
3 tablespoons lemon juice
3 tablespoons olive oil
1 tablespoon light brown sugar
1 1/2 tablespoons balsamic vinegar
1 teaspoon mustard
1 tablespoon freshly chopped parsley
1/4 teaspoon black pepper
Directions :
1- Remove the seeds from the watermelon using the tip of a knife, and cut it into medium cubes.
2- In a large bowl, add all the salad ingredients and mix to combine.
3- In a small bowl, add the lemon juice, olive oil, light brown sugar, balsamic vinegar, mustard, parsley, black pepper, and mix all the ingredients together using a whisk until well combined.
4- Pour the vinegar sauce over the watermelon salad just before serving.
5- Mix the salad with two large spoons until it is completely coated with the vinegar sauce. Serve with steak, chicken or fish.
