830- Whole Wheat Pumpkin Cake / كعكة اليقطين بالقمح الكامل
80 ml (⅓ cup) of virgin olive oil
120 ml (½ cup) of honey
240 ml (1 cup) of pumpkin puree
1 teaspoon of vanilla extract
½ teaspoon of salt
½ teaspoon of ground cinnamon
½ teaspoon of ground ginger
¼ teaspoon of ground nutmeg
¼ teaspoon of ground cloves
150 grams (1 ¾ cup) whole wheat flour
1 teaspoon of baking soda
60 ml (¼ cup) hot water
1- In a large bowl, whisk the olive oil and honey together until well incorporated.
2- Add all the wet ingredients and spices: eggs, pumpkin puree, vanilla extract, salt, cinnamon, ginger, nutmeg, and cloves. Continue whisking until smooth.
3- Add the whole wheat flour, baking soda, and hot water. Mix well with a spatula until you get a smooth batter.
4- Pour in a medium round baking pan covered with parchment paper for the cake not to stick.
5- Bake in a pre-heated oven at 180 C / 360 F for 30 minutes. When the cake is ready, touch the center it should feel firm but still soft to the touch. Do not overbake the cake.
6- Let the cake cool down completely before unmolding. The cake should be spongy with a soft center that gives it a slight pudding like texture.
