831- Chocolate Truffles / ترافل بالشوكولاتة
100 gr (3.5 oz.) 60-70% dark chocolate
100 gr (3.5 oz.) heavy cream
1/2 teaspoon of honey
15 gr (1 tablespoon) butter
100 gr (1 cup) of unsweetened cocoa
Aromas of your choice: orange peel and 1 stick of cinnamon, a small pinch of saffron, a bag of black or green tea, a stick of vanilla, etc.
Step 1: Prepare the ganache
1- In a medium saucepan, place the cream and honey. Bring the cream to a boil.
2- Add the flavoring of your truffles to the cream. Turn off the heat and let infuse for ten minutes.
3- Remove the flavoring used (in this case orange zest and the cinnamon stick), and heat the cream again.
4- Place the chocolate in a medium bowl and pour the hot cream over it, set aside for 1 minute.
5- Whisk the preparation vigorously until your chocolate is completely melted, and you obtain a smooth and shiny ganache.
6- And the butter and whisk well.
Step 2: Make the truffles
1- Place the ganache in the fridge to firm up a bit. Then place it in a pastry bag and cut off the head of your pastry bag.
2- On a sheet of baking paper placed on a buttered baking sheet, pipe small balls of ganache.
3- Reserve in the refrigerator until your ganache balls are completely set. Roll the balls in cocoa powder.
4- Place the truffles in a sieve to remove excess cocoa.
