884- Soup with Shrimp and Glass Noodles / حساء بالقمرون والشعرية الصينية
100 grams (3.5 oz) shrimp, peeled
100 grams (3.5 oz) calamari, cut into slices
3 tablespoons olive oil
1 medium onion, grated
50 grams (1.7 oz) dried black mushrooms, soaked in hot water for 30 minutes then cut into pieces
1 tablespoon cornstarch
2 tablespoons soy sauce
2 tablespoons fish sauce nuoc mam
1 liter (5 cups) hot water
50 grams (1.7 oz) glass noodles, soaked in hot water for 10 minutes
2 tablespoons finely chopped cilantro
Salt and pepper, to taste
1- Heat the olive oil In a large pot over medium heat. Add the grated onion and cook for 5 minutes stirring from time to time with a wooden spoon until soft.
2- Drain the black mushrooms and add them along with salt and pepper. Cook for 2 minutes.
3- Add the calamari and cornstarch. Continue cooking for another 2 minutes stirring from time to time until the ingredients are combined.
4- Add the shrimp, hot water, soy sauce, and fish sauce. Cover the pot and bring to a boil.
5- Drain the glass noodles then cut them into smaller pieces using scissors. Add the noodles to the pot, cover the pot and cook the soup on medium-high heat for 10 minutes.
6- At the end of cooking, add the chopped cilantro and turn the heat off. Serve hot.
