897- Zucchini Waffles / وافل بالقرع الأخضر
3 small grated zucchini (1 1/2 cups), squeeze well to remove all the excess water
1 small onion, finely chopped
200 grams (1 2/3 cups) whole wheat flour
1 tablespoon baking powder
1 teaspoon garlic powder
300 milliliters (1 1/4 cup) milk
2 tablespoons olive oil
2 tablespoons finely chopped parsley
Salt and pepper, to taste
1- In a large bowl, add the whole wheat flour, baking powder, garlic powder, salt, and pepper. Mix well with a wooden spoon until well combined.
2- In another bowl, add the eggs, milk, olive oil, and parsley. whisk until well incorporated.
3- Slowly add the egg mixture to the dry ingredients while whisking until the batter is smooth.
4- Stir in the grated zucchini and onion. Mix until the zucchini is completely covered with the waffle batter.
5- Brush a preheated waffle iron with olive oil and spoon into in the waffle batter.
6- Cook the zucchini waffles for 8 to 10 minutes or until the outside is crispy.
7- Serve the zucchini waffles hot, topped with cream cheese, guacamole, or any other topping of your choice.
