Ingredients :
160g (1 cup and 2 tablespoons) all-purpose flour
100g (¼ cup + 3 tbsp) butter, room temperature
50g (1/4 cup) light brown sugar
1 egg yolk
Zest of one lemon
Pinch of salt
50g (1/4 cup) light brown sugar
Directions :
1- Place the butter in a bowl and work it with a spatula until smooth.
2- Add the light brown sugar and salt, then mix until you get a soft mixture.
3- Add the egg yolk and lemon zest then mix to combine.
4- Add half of the flour, then mix. Add the remaining half of the flour and mix again until the flour is well incorporated.
5- Shape the dough in the form a log of about 5cm (2in) in diameter.
6- Sprinkle the light brown sugar on your work surface, then roll the log in the sugar until it is completely covered. Wrap the log tightly in plastic wrap then refrigerate for 30 minutes.
7- When the log is chilled, remove the plastic wrap and leave it to rest at room temperature for 5 minutes.
8- Slice the log into 5mm (1/4in) thick circles and place them on a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C / 356°F for 20 minutes. Allow to cool then serve.
