130 grams (1/2 cup) butter, at room temperature
80 grams (1/2 cup) granulated white sugar
1 pinch of salt
1 tablespoon vanilla sugar
60 grams (1/3 cup) ground sesame seeds
200 grams (1 1/2 cups) all-purpose white flour
100 grams (1/2 cup) sesame seeds
60 grams (1/3 cup) apricot jam
1- In a large bowl, add the butter, sugar, vanilla sugar, and salt. Beat with an electric egg beater until the texture becomes creamy.
2- Add the ground sesame seeds to the butter mixture and continue beating for 1 minute until well combined.
3- Add the flour and continue mixing using your hand until a homogeneous and smooth cookie paste is formed.
4- Start shaping the cookie dough into small balls the size of walnuts.
5- Roll the cookies into the sesame seeds one at a time until fully covered, then place them on a baking sheet covered with parchment paper.
6- Press the center of the cookies using your finger to form small holes, then bake in a preheated oven at 180°C/ 356°F for 15 minutes, or until they turn golden brown.
7- Remove the cookies from the oven and allow to cool completely. Using a small spoon, fill the sesame cookies center with apricot jam and serve.
