Ingredients :
For the chicken:
200 grams chicken breast, cut into medium cubes
2 tablespoons olive oil
2 garlic cloves, grated
3 tablespoons lemon juice
1 teaspoon dried oregano
1 tablespoon dried chives
1 tablespoon chopped fresh mint
1/2 teaspoon ground ginger
Salt and pepper, to taste
For the garlic sauce:
100 grams (3.5 oz) plain yogurt, unsweetened
1 tablespoon mayonnaise
1 garlic clove, grated
1 teaspoon lemon juice
1 tablespoon milk
Salt and pepper, to taste
For the sandwich:
4 multigrain sandwich bread rolls
Lettuce
Tomato slices
Directions :
Step 1: Preparing the chicken
1- In a large bowl, add the chicken cubes, olive oil, grated garlic, lemon juice, dried oregano, dried chives, mint, ground ginger, salt and pepper. Mix well then cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
2- Heat up olive oil in a pan over medium heat. Add the marinated chicken and cook for 8 minutes until slightly golden brown. Remove from the heat and set aside.
Step 2: Preparing the garlic sauce
3- In a medium bowl, add the yogurt, mayonnaise, garlic, lemon juice, milk, salt and pepper. Mix and set aside.
Step 3: Assembling the sandwich
4- Cut the bread rolls to form a pocket. Add lettuce, a slice of tomato and the chicken. Add the garlic sauce and serve.
