921- Vegetarian Burgers with Raisin and Walnut Salad / برجر نباتي مع سلطة الزبيب والجوز
For the filling
1/4 head green cabbage, thinly sliced
3 tablespoons golden raisins
1/2 red apple, cut into medium cubes
8 grapes, cut into cubes
3 tablespoons raw walnuts, chopped
4 tablespoons plain yogurt
1 teaspoon lemon zest
1 teaspoon lemon juice
1 tablespoon dried chives
Salt and pepper, to taste
For the sandwich
4 whole wheat burger buns
1- In a large bowl, add the cabbage, raisins, apples, grapes, and walnuts then mix to combine.
2- In a small bowl, combine the plain yogurt, lemon zest, lemon juice, dried chives, salt and pepper.
3- Pour the yogurt mixture over the cabbage and mix until well combined.
4- Cut the burger buns into two. Add lettuce and a thick layer of the cabbage filling. Cover with the top bun and serve.
