933- Moroccan Carrot Salad / سلطة الجزر المغربية
For the salad
4 large carrots, peeled and grated
2 oranges, peeled and chopped into bite sized pieces
4 oz (120g) raisins
1 oz (30g) raw almonds, roughly chopped
2 oz (50g) raw walnuts, roughly chopped
For the dressing
1/3 cup (80ml) orange juice
2 tablespoons orange blossom water
2 tablespoons lemon juice
1 tablespoon honey
Salt to taste
1- Soak the raisins in hot water for 10 minutes. Drain and set aside.
2- In a jar, combine all the ingredients for the dressing. Place the lid on top of the jar securely, then shake until all ingredients are well combined.
3- Place the grated carrots, oranges and raisins in a large bowl. Add the dressing and mix to combine.
4- Divide the salad among the serving plates, sprinkle with the almonds and walnuts, then decorate with mint leaves and serve.
