945- Harbel (cracked wheat milk pudding) / هربل القمح مطبوخ بالحليب
150g (5 ounces) cracked wheat
1.75L (7 cups) water
50ml (3.5 tablespoons) olive oil
1 teaspoon salt
3 tablespoons condensed milk
1/2L (2 cups) whole milk
2 tablespoons orange blossom water
2 tablespoons honey
1- Wash the cracked wheat several times until the water runs clear, then place it in a large bowl and cover it with water. Set aside for an hour, then drain.
2- Bring the water and the olive oil to a boil in a large pot.
3- Add the cracked wheat and the salt, then cook for 30 minutes, stirring occasionally until the wheat is cooked and becomes tender.
4- Add the condensed milk and milk. Continue cooking for another 10 minutes while stirring.
5- Add the orange blossom water and the honey. Mix to combine, then turn off the heat. Serve the Harbel with a drizzle of honey and enjoy warm.
