948- Chocolate Cake / كيك صحي بالشوكولاتة
For the cake:
3 medium eggs
3 tablespoons honey (or to taste)
1/2 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
2 tablespoons unsweetened shredded coconut
75ml (1/3 cup) coconut oil
3 tablespoons almond milk
3 tablespoons whole wheat flour
8g (2 teaspoons) baking powder
1 banana, peeled and cut into slices
1 tablespoon pumpkin seeds
1 tablespoon sunflower seeds
For the syrup:
3 tablespoons honey
For the icing:
1 banana, peeled and mashed
3 tablespoon unsweetened peanut butter
4 tablespoons unsweetened cocoa powder
175g (6 ounces) mascarpone
1 tablespoon almond milk
4 tablespoons honey (or to taste)
Step 1: Preparing the cake
1- Preheat the oven to 180°C / 356°F
2- In a large bowl, whisk the eggs, honey, milk, vanilla extract, cocoa powder and shredded coconut.
3- Add the coconut oil, flour and baking powder, then whisk until well combined.
4- Place the mixture in around 18 cm (7-in) cake mold covered in parchment paper. Add the banana and the seeds, then mix to combine with a spatula.
5- Bake for 20 minutes or until the cake is completely done. Let the cake cool completely before cutting it in half.
Step 2: Preparing the syrup
6- Place the water and honey in a saucepan over medium heat. Bring to a boil, then set aside to cool.
Step 3: Preparing the icing
7- Whisk together all the ingredients of the cream, then set aside.
Step 4: Assembly
8- Place half of the cake on your serving dish. Spoon half of the syrup over the cake, then add a generous layer of icing.
9- Add the second half of the cake and soak it with the syrup. Cover the cake with the icing, then refrigerate for at least 4 hours. Decorate with berries and coconut then serve.
