12 mini cupcakes or 6 large cupcakes
For the cupcakes
100g (1/2 cup) white granulated sugar
1 medium egg
1/4 teaspoon salt
120g (1/2 cup) unsalted butter, melted
80ml (1/3 cup) milk
1/2 teaspoon vanilla extract
Zest of a lemon
180g (1 cup) all purpose flour, sifted
8g (2 teaspoons) baking powder
For the frosting
150g (6 ounces) cream cheese, divided
300ml (1 1/4 cup) heavy cream (35% fat content), divided
3 tablespoons icing sugar, divided
1.5 teaspoons vanilla extract, divided
Red and blue food coloring
Step 1: Preparing the cupcakes
1- Preheat the oven to 180°C / 356°F.
2- Place the sugar, egg, and salt in a large bowl, then whisk to combine.
3- Add the butter, milk, vanilla extract, lemon zest, flour, and baking powder, then continue whisking until well combined.
4- Divide the batter into cupcake liners, then bake for 20 minutes. Set aside to cool completely.
Step 2: Preparing the frosting
5- Divide the cream cheese, heavy cream, icing sugar, and vanilla extract among three large bowls.
6- Add a drop of blue coloring to one bowl, and a drop of blue coloring and a drop of red coloring to the second bowl, and keep the third bowl as is.
7- Whip up each frosting using an electric egg beater until the cream reaches stiff peaks.
8- Place each frosting in a piping bag and use it to frost the cupcakes. Serve immediately and enjoy!
