973- Lemon and mint chicken kebabs / كباب الدجاج بالحامض و النعناع
250g (1/2 lb) chicken breast, cut into large cubes
2 tablespoons lemon juice
6 mint leaves, finely chopped
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon coriander
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 red bell pepper, diced
1/4 green bell pepper, diced
1/4 yellow bell pepper, diced
1 tablespoon vegetable oil
Wooden skewer, soaked in water for 10 minutes
1- Place the chicken, lemon juice, mint and spices in a large bowl, then mix to combine. Cover with plastic wrap, then refrigerate for at least an hour and up to overnight.
2- Place the chicken and peppers on the wooden skewers making sure to alternate the colors.
3- Heat up the oil in a skillet over medium heat, add the kebabs and cook for 3 minutes on each side, then enjoy!
