974- Lemon and Mint Cake / كعكة الليمون والنعناع
200g (1 cup) light brown sugar
Zest of 2 lemons or limes
4 medium eggs
2 teaspoon vanilla extract
Pinch of salt
150g (3/4 cup) unsalted butter, melted
100ml (1/2 cup) lemon juice
170g (3/4 cup) plain unsweetened yogurt
250g (1 1/2 cups) all purpose flour, sifted
14g (3 teaspoons) baking powder
10 mint leaves, finely chopped
2 tablespoons honey
Zest of a lemon or lime
1- Preheat the oven to 180°C/356 °F.
2- In a large bowl, combine the light brown sugar and lemon zest.
3- Add the eggs, vanilla, and salt, then whisk to combine.
4- Add the melted butter, lemon juice and yogurt, then whisk to combine.
5- Add the flour and baking powder, then mix until well combined.
6- Add the mint, then mix with a spatula.
7- Pour the batter in a 28cm x 9cm x 6cm (11in x 3.5in x 2.5in) loaf pan that has been lined with baking paper, then bake for 50 minutes.
8- Set aside to cool completely, then decorate with honey and lemon zest.
