209 – Avocado Shrimp Appetizer Recipe
- 1 large avocado
- 1 small apple
- 2 cornichons
- 2 tablespoons finely chopped cilantro
- 100 grams pre-cooked shrimps
- 1 lemon
- Mayo (fat-free)
- Spices: salt and pepper
Step 1: Preparing the Ingredients
1- Cut the shrimp into small pieces.
2- Clice and cut the cornichons into small pieces.
3- Cut the apple into small pieces.
4- Slice the avocado, remove the inside of the avocado without piercing the skin. Slice and cut the avocado pulp into small pieces. Keep the avocado skin to use them later as cups to serve the mixture. Using a spoon, scrape the inside of the avocado skin to make it smooth.
Step 2: Mixing the Ingredients
1- In a large bowl, mix shrimp, cilantro, cornichons, apple pieces, and avocado pieces together.
2- Squeeze some lemon juice on the mixture to make sure that the apple pieces and avocado pieces do not turn brown.
3- Add mayo to the mixture to get a creamy texture.
4- Season with salt and pepper to your taste.
Step 3: Serving the appetizer
1- Place the mixture in the avocado skins (as if they were bowls). Decorate with a cilantro leaf and a whole shrimp.
