541- Cauliflower Zaalouk / وصفة زعلوك القرنبيط

Ingredients :

1 medium-sized cauliflower
4 large garlic cloves
1/4 cup chopped parsley and cilantro (mixed)
2 tablespoons olive oil
1 teaspoon ground paprika
1 teaspoon ground cumin
Salt and pepper

Directions :

1- Slice the cauliflower into medium-sized chunks.
2- On high heat, place a large pot filled with water, add the cauliflower chunks and pinch of salt, cover, and cook until the cauliflower is tender enough to mash.


3- Finely chop the garlic, parsley, and cilantro.
4- Drain the cauliflower from the water and place it in a large bowl.
5- Mash the cauliflower with a spoon until you get a soft mixture.

6- In a large skillet, heat olive oil on medium heat, add the crushed garlic, and cook for 2 minutes. Now add the mashed cauliflower, ground paprika, ground cumin, chopped parsley and cilantro, salt, and pepper. Mix well.

7- Cook for a few minutes while stirring constantly. Taste and adjust the same spices per your taste. Cook for around 10 minutes until the liquids are absorbed.
Serve hot or cold, with a some fresh chopped cilantro on top and a squeeze of fresh lemon, and serve with crusty bread!
