041 – Crème Caramel (Flan)

Ingredients :

4 large eggs
2/3 cup of sugar
2 1/3 cups of milk
1/2 teaspoon of vanilla extract or a pinch of saffron + 1/2 teaspoon of cardamom
Ingredients for the Caramel
1 cup of sugar
1/4 cup of water
1/2 teaspoon of lemon

Directions :

Steps for making the Caramel:

1- On medium heat, cook the sugar, lemon juice, and water in a pan until the sugar turns into a light golden caramel.
2- Pour the caramel into the flan ramequins.

Steps for making the Flan:

1- Put the milk to boil.
2- Beat the eggs with the sugar until you get a whitish mixture.
3- Once the milk is boiled add the flavoring (for the traditional recipe add the vanilla, or give your flan a twist by adding the saffron and cardamom)
4- Slowly beat in the milk into the egg mixture.
5- Place the ramequins in a baking pan and pour the milk and egg mixture in the ramequins.

Final steps:

1- Preheat your oven at 400 degree.
2- Add hot water in the baking pan and bake the flan for 1 hour or until the mixture is set.
3- Let the flan cool down before putting the ramequins in the fridge for the next 1 hour or 2.

Serving:

Serve the flan cold. Gently separate the edges of the flan with a knife, top the ramequin with a plate and flip it, shake a little bit and the flan will be transferred to your plate. Enjoy!
