126 – Fakya of Achoura Recipe – Moroccan Snack

Ingredients :

  • 3 cups of flour
  • 1 1/4 cups of sugar
  • 1 cup of raw almonds
  • 1 cup of sesame seeds
  • 2 tablespoons of anise seeds
  • 1/2 tablespoon of baking powder
  • 1/4 teaspoon of slat
  • 1/2 cup of orange blossom water
  • 1/2 cup of vegetable oil
  • 2 large eggs
  • Dried Fruit: dates, figs, raw almonds, raisins, walnuts, dried apricots, etc.

Directions :

Preparation:
1- Roast the almonds, on medium heat, in a pan for 10 minutes. Stir from time to time.
2- Once the almonds are roasted, grind them in a food processor until you get a powdery texture.
3- Roast the sesame seeds, on medium heat, in a pan for 10 minutes. Stir from time to time.

Making the dough:
1- In a large bowl, mix the following ingredients: flour, sugar, almond powder, sesame seeds, anise seeds, baking powder, and salt.
2- Incorporate the orange blossom water, vegetable oil, and eggs to the dry mixture. Need the dough until you get a malleable dough that you can roll into a ball.
Tip: if the dough is too dry add some orange blossom water, if too sticky add flour.

Shaping & Baking the cookies:
1- Take a small portion of the dough and roll it in a ball (the size of a small orange). On your working station, roll the dough into a long and thing cylinder.
2- Using scissors (or sharp knife), cut small pieces of the dough directly into a baking pan covered with parchment paper.
3- Preheat your oven to 360 F degrees.
4- Bake the cookies for 20 minutes or until golden brown.
Note: when the cookies are still hot they may seem soft, but as they cool down they become crunchy.

Mixing the cookies with the dried fruits:
1- Mix the cookies with the dried fruits and serve in a bowl.
Tip: you can store the Fakya of Achoura in a tin for up to 1 month.
Serving: Serve with Moroccan Mint Tea!
