Ingredients :
- 1/2 liter (a little more than 2 cups) of whole milk
- 1 cup of flour
- 1/3 cup of sugar
- 2 large eggs
- 1 tablespoon of butter
- 1 teaspoon of vanilla extract
- A pinch of salt
- 1-2 cups of dried prunes (or dried apricots)
- 1 tea bag (black tea)
Directions :
1- Infuse the tea bag in hot water and place the dried prunes in the tea while preparing the cake. This will make the prunes soft and tender.
2- Mix all the dry ingredients: flour, sugar, and salt.
3- In a separate bowl, beat the 2 eggs.
4- Heat the milk in a saucepan. Once the milk reaches a boiling point, add the butter and vanilla extract to it and remove it from the heat.
5- Incorporate the eggs into the flour mixture, then slowly add the milk. Mix well until all the flour is dissolved.
6- Prepare your baking pan by spreading butter on it then placing a parchment paper. Place the prunes in the baking pan. Pour the cake batter in the baking pan.
7- Preheat your oven to 450 F degrees. Once the oven is hot, bake the cake at 450 F degrees for 15 minutes.
8- After 15 minutes, reduce the oven temperature to 400 F degrees and bake the cake for another 15 minutes.
9- Once more, after 15 minutes, redue the oven temperature to 360 F degrees and bake the cake for 30 minutes or until done. To check that your cake is done, insert a toothpick in the center of the cake, it should come out clean.
10- You can serve the cake warm or cold (place the cake in the refrigerator). Sift powdered sugar on top of the cake before serving.
