288 – Heavenly Chocolate Mousse Recipe / شوكولا موس

Ingredients :

 

  • 6 oz (175 grams) dark chocolate (60-70% cocoa content)
  • 1/3 cup (8 cl) milk
  • 2 tablespoons (24 grams) white granulated sugar
  • 4 egg whites (large eggs)
  • 1 egg yolk (large egg)
  • A pinch of salt

Directions :

Step 1: Making the Mousse
This recipe makes around 4 large cups of mousse.
1- Place the egg whites in a large bowl. Add a pinch of salt and beat with an electrical beater (at high speed) for 5 minutes until the egg whites become fluffy with soft white peaks. When the eggs start becoming fluffy, add the sugar all at once and continue beating until you get firm white peaks.Note: Make sure that the egg whites have no traces of egg yolks and all utensils are super clean, otherwise the egg whites will not become fluffy!
2- Melt the dark chocolate in a bain-marie (in a bowl over a boiling water).
3- Once the chocolate has completely melted, remove the bowl from the boiling water, and add cold milk to cool down the chocolate a bit. Mix well.
4- Add the egg yolk to the chocolate while mixing quickly.
5- Gently, fold in the white egg mixture into the chocolate mixture using a spatula. Mix gently, with a circular movement, from top to bottom, so the mousse stays airy and creamy (and we do not lose the fluff from the egg white mixture).
6- Place in cups. Put in the fridge for at least 2 hours before serving!
