Moroccan Chicken with Lemon Marinade (Mkalli M'hammer)

My childhood friend has an amazing Moroccan chicken recipe called "Djaj M'Kalli and M'Hammer", "djaj" means "chicken" in Moroccan, "M'Kalli" means "fried" and "M'Hammer" means "roasted". We will marinate a whole chicken in a flavorful sauce overnight, then cook it with a bit of olive oil and onion (so not really fried), then roast it. The chicken is then served topped with caramelized onions, along with crusty bread. Yum! Definitely the best chicken you ever had!

Meringues with Walnuts (Gluten Free)

Every Moroccan knows "Raibi Jamila". It's a pomegranate yogurt drink that we all grew up with in Morocco, and I doubt you can find it in any other country but Morocco. I asked around and search the internet to see if I can find a recipe that reminds me of Raibi Jamila and I did find one, that many blogs share, so not sure who was the originator of this recipe. I change 2 things to the recipe: first, I used vanilla extract which really makes the flavors pop. Second, I adjusted the quantities of buttermilk, grenadine syrup, and sugar - and I suggest you do the same. The sourness of the buttermilk varies from one kind to another, and the sweetness of the grenadine syrup will also change depending on the brand you are using. So adjust the quantities until you get the right taste. Whether you know "Raibi Jamila" or not, I am sure you will enjoy this beverage!

Meskouta - Moroccan Yogurt Cake

Today I am going to show you how to make a staple Moroccan cake called Meskoutal. There are so many recipes of Meskouta because every Moroccan family has its own way of making it. We are going to make the yogurt version, some people prefer to replace the yogurt with orange juice. All the measurements are based on the cup of yogurt, so when I say 1 1/2 cup of sugar, I measured it using the yogurt cup. Meskouta is a very simple recipe, so make it your own by adding your favorite ingredients such as almonds, walnuts, chocolate chips, cover it with jam, etc. whatever you feel like. Serve Meskouta with milk, coffee, or Moroccan mint tea. If you have any leftovers, which I doubt, just cover them with foil and place them in the fridge. Pop the cake for 10-15 seconds in the microwave before serving again.

Moroccan Style Burger - July 4th Special!

Fun Fact: Did you know that Morocco was one of the first nations to recognize the U.S. as an independent country in 1777. July 4th is the American independence day and here in the U.S. it is a day off. People go to parks with friends a family to barbeque, have a nice lunch, and in the evening there are wonderful fireworks all over the place that you can watch from the park. Today we are making a dish special for this occasion: hamburger! However, we are going to bring a Moroccan twist to it. I am going to use Moroccan ingredients and spices to bring all the unique warm flavors of Morocco in this juicy burger. I am using ground turkey but feel free to use ground chicken; it’s healthier and it is a nice change from red meat.
