Chorba Lsan Tair - Orzo Meat Soup

This morning I went to the farmer's market and I got super fresh vegetables. So I thought of making a soup especially that Ramadan is coming up. We are going to make a very popular soup in Morocco called "Chorba Lsan Tair". "Chorba" means soup, "Lsan Tair" means "the tongue of a bird". It is called this way because we add to the soup a macaronia product, basically pasta, called "orzo" that has the shape of rice grains and they look like the tongue of a bird! It's super easy, super healthy, and super delicious!

Saffron Flavored Pumpkin Soup

It is time for a soup recipe what's tastier that a Saffron Flavored Pumpkin Soup? This soup is super creamy and very versatile. I am using Kabocha squash as the main ingredient but feel free to replace it with another type of pumpkin or squash (e.g. butternut squash). Also, feel free to add other vegetables such as carrots or potatoes. And finally, this is a milk based soup, so if you are lactose intolerant replace the milk with soy milk and if you want a richer flavor replace some of the milk with heavy cream. Enjoy!
