Maakouda - Moroccan Potato Patties

Ingredients

  • Simple Ingredients
  • 1 pound of potatoes, peeled and diced
  • 1 tablespoon of finely chopped cilantro
  • 1 tablespoon of finely chopped parsley
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • ΒΌ teaspoon of pepper
  • 1 egg
  • 3 minced garlic cloves
  • Other ingredients
  • Flour
  • 2 eggs
  • Oil for frying

Directions

  1. Step 1: Preparing the Potato Mixture

    1. Cook the potatoes in boiling water until they become soft.

    2. Once the potatoes are cooked, drain them from the water.

    3. Mash the potatoes with a fork or a manual potato masher.

    4. Add the parsley and cilantro, egg and garlic and splices to the potatoes. If you like spicy food you can add hot chile pepper to the potatoes.

  2. Step 2: Making the Patties

    1. Make small patties out of the potato mix.

  3. Step 3: Frying the Maakouda

    1. First heat the oil in the skillet

    2. Dip the potato patties in the egg, then the flour and then fry them. Make sure the oil is very hot before frying.

    3. Cook the Maakouda until it becomes golden brown and use paper towel to absorb the excess oil.

    4. Serve the Maakouda immediately. You can serve it as an appetizer or as the way it is sold on the street in Morocco as a sandwich using French bread or Moroccan bread lettuce, tomato and hot sauce.

      Make sure the oil is very hot before you fry them, else they'll sink and absorb too much oil. And don't forget the egg, that holds the mash together.

    Alia, have you ever tried to bake the patties instead of frying them? It seem it would be a healthier option.

    Wow! thanks so much for that recipe. I don't fry them, just dust them with potato flour before I place them in a lightly greased pan. They brown nicely and keep intact (soft in the middle, crisp on the outside). Simple and amazing! Thanks again.

    When I was studying in Fes this summer I pretty much lived off these. Looking forward to making them myself. I always ate them on a sandwich with eggs and a hotsauce/tapenade type thing. Any idea what that sauce may have been?

    i made it yesterday , did not come as i expected it to be, i fried it on mixed flour and water rather than an egg an flour,but well done alia.

    these are good but they don't exactly taste like the street food version i get in fez. between my husband's efforts and mine, we only got so far. in the end, i used your recipe for seasoning the mash but dipped the potato patties in tempura batter then deep fried. it's a bit of a messy job and only for indulgent occasions - but these were almost like the makkouda i get from street vendors in the madina. if only i could get the whole veggie sandwich flavour that my very favourite vendor created...

    Hey...I just tried this delicious recipe...it was amazing...
    at first I started with putting them in egg then flour to fry. My father told me to try putting them in Flour first then egg then put to fry...I find they turned out much nicer looking.
    Both ways work great. =) Thanks soo much
