Chicken Tajine with Carrots and Preserved Lemons

Ingredients

  • 1 whole chicken - cut into large pieces (1.5 pounds)
  • 1 large onion - peeled and diced
  • 6 carrots - peeled, cut into halves, and cored
  • 1/4 cup of finely chopped cilantro
  • 1/4 cup of finely chopped parsley
  • Preserved lemons (substitute with olives or 1 tablespoon of lemon juice)
  • 2 tablespoons of olive oil
  • 1 teaspoon of crushed garlic
  • 1 teaspoon of ginger powder
  • 1/4 teaspoon of turmeric powder
  • 1 teaspoon of salt (to taste)
  • 1/4 teaspoon of pepper (to taste)
  • water

Directions

  1. On medium heat, drizzle the olive oil in your pan, add the onions, all the spices, and the chicken. Cover your pan and let them cook for 5 minutes.

  2. Add the parsley and cilantro to the chicken.

  3. Cover the chicken with water, close the pan with the lid, and let the chicken cook for 30 minutes.

  4. After 30 minutes, add the carrots to the chicken and let them cook with the chicken for 30 minutes. We do not add the carrots to cook from the beginning because we do not want them to be overcooked.

  5. During the last 5 minutes of cooking add the preserved lemons (olives or the 1 tablespoon of lemon juice) and let the tajine cook for another 5 minutes without the lid. 

    Note: if you are using preserved lemons, make sure to wash them with water before using them as they are salty and might make your tajine too salty.

  6. Serving: Serve this tajine with bread. Enjoy!

    Thanks alot for ur effort and nice ways of discribig dishes. you really make the morocan cooking easily. I am an Indian, working in Saudi Arabia as a public relaiton officer. there are many similiraites in our cooking, so I watch your show frequently. In my opinion- better to cut the carrots thin,tht will be tasty. I expect more dishes frm you.

    Thank you for following your passion in Moroccan cooking. My husband is from Morocco, and although he tried to show me how to cook a chicken tagine over here, something was always missing. I came across your you tube videos. I use this chicken carrot recipe but with a little twist of my own. Also, the first time that I tried your recipe, my husband was highly impressed. He said that was really authentic Moroccan food. Just purchased your book on Amazon.com. Can't wait to start using it.

    I have fresh ginger, but not ginger powder. Is that OK? I love your videos. It makes cooking so much easier. The first thing I did to prepare for your recipes is preserve lemons 1 month ago.

      ginger powder is different from fresh ginger. We dont really use fresh ginger to cook tagines in Morocco. it should be easy to find ginger powder in the supermarket or any store around your area.

    Thx Alia for this recipes. I cooked it for my family - it was delicious, but i didnt feel taste of lemon juice, maybe i could put two or three big tablespoons? I served this tajine with rice...it was good, especialy for my two little girls :)

      I am glad you enjoyed it! the taste of lemon will depend on the type of 'preserved lemons' you used. In Morocco, their taste is pretty strong. Also, it does not have to be overpowering, just a bit of flavor added to the tagine. so all good :-)
