Snowball Cookies
Ingredients
- For the dough:
- 2 cups of flour
- 3/4 cup of sugar
- 1/4 teaspoon of vanilla extract
- 2 large eggs
- 1 teaspoon of baking powder
- A little less than 2/3 cup of oil
- Pinch of salt
- For the coating:
- 3 tablespoons of orange blossom water
- 1 cup of apricot jam (or your favorite fruit jam)
- 2 cups of natural unsweetened coconut flakes
Directions
For making the cookies:
1- Mix all the dry ingredients together: the flour, sugar, baking powder, and salt.
2- In a separate bowl, beat the eggs with the vanilla extract and the oil.
3- Fold in the flour mixture into the egg mixture.
4- Make small balls with the dough and place them on a baking pan covered with parchment paper.
5- Preheat your oven at 350 degrees and bake the cookies for 15 minutes.
Note: Make sure to keep space between the dough balls as they spread out when baking.For rolling the cookies:
6- Mix the jam with the orange blossom and microwave for 30 seconds.
7- Dip 2 cookies still hot in the jam mixture, join them together and dip them again in the jam mixture until they are completely covered with jam.
8- Roll the 2 joined cookies in the coconut flakes.
9- Re-do steps 7 and 8 for all the cookies.Note: these cookies taste even better the next day once they absorb the flavors of the orange blossom and the jam.

These cookies taste amazing with Moroccan tea.

whats blossom water, can i just use water
Hi Luiza, blossom orange water is has an amazing flavor and can not be replaced. you can just omit it if you dont have it. otherwise, try to get it from an oriental store or online (example: amazon.com)
Hi Alia, I just came back from mogador where we ate pink coconut cakes. Is this the same thing? Only without the pink color?
