042 – Lamb Meat Skewers – Eid-el-Adha Specials
1 pound of tender lamb meat
1 large onion
1/2 cup of chopped parsley
1 teaspoon of cumin
1 teaspoon of salt
1/2 teaspoon of pepper
3 tablespoons of cooking oil
1.Cut the meat into cubes.
2.Grate the onion.
3.Mix all the ingredients together: meat, onion, parsley, spices, and oil.
4.Cover the meat and let it marinate for the next hour or 2 in the fridge.
5.Put the meat in the skewers.
6.If you have a barbeque use it to cook the meat. Otherwise, place the skewers on top of a baking pan and broil them in the oven until cooked but still juicy.
Hint: Add some water in your baking pan, so when the meat juices drop they do not get burnt and create smoke.
Serve the skewers immediately with bread and Moroccan mint tea. Enjoy!
