325 – Moist Lemon Cake Recipe / كعكة الليمون فائقة الليونه

Ingredients :

 

  • 1/2 cup (70 grams) all-purpose white flour
  • 1/2 cup (50 grams) almond powder
  • 1/4 cup (30 grams) cornstarch (maizena)
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup (125 grams) butter
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 2 large eggs
  • 1/2 cup + 2 tablespoons (125 grams) white granulated sugar2 teaspoons orange blossom water

 

Directions :

 

Step 1: Preparing the Ingredients
1- Let’s start with the dry ingredients. Sift the flour through a sieve, into a bowl. Add ground blanched almonds, corn starch (maizena), a pinch of salt, and baking powder. Mix well with a whisk.
2- Melt the butter in the microwave.
3- Grate the lemon in the small holes of the grater to get lemon zest.
4- Then squeeze the lemon to extract its juice.
5- In a bowl, beat the eggs using an egg mixture, at high speed, for a minute, then add the white granulated sugar all at once and continue beating for 5 minutes until you get a very thick whitish mixture.

Step 2: Making the Batter
1- Add the egg mixture to the dry ingredients. With a spatula, gently mix, in a circular movement from top to bottom… gently, you don’t want to break the fluffiness of the eggs.
2- Once well incorporated add the melted butter, a little bit at a time, mixing in between. You will see that the dough will absorb the butter.
3- Add the lemon zest and the lemon juice… mix a little. And finally add the orange blossom water… oh YUM! Mix and that’s it we are done!!!

Step 3: Baking the Cake
1- Let’s prepare the baking pan. I am using an 8 inch (20 cm) circular pan. First you grease it with butter for the parchment paper to stick, then butter the parchment paper.
2- Pour the batter into the pan. Even out the top with the spatula et voila!
3- Bake in a pre-heated oven at 360 F / 180 C for 30 minutes and here you get this beautiful golden brown cake that smells like heaven.
4- To know if the cake is ready, gently touch the center with your fingers, if you should feel firm.
Place a plate on top of the cake, and flip it! Here you go a perfect shape!!! Very carefully remove the parchment paper… be very gentle so you don’t break your cake.

Now place your presentation plate on top of the cake and flip again… I want my beautiful golden color top back! Let the cake sit on your counter until it reaches room temperature.
Now that our cake cooled down, You can serve as is, or make it look fancy…

Step 4: Final Steps:
1- Place a plate on top of the cake, and flip it! Here you go a perfect shape!!! Very carefully remove the parchment paper… be very gentle so you don’t break your cake.
2- Now place your presentation plate on top of the cake and flip again… I want my beautiful golden color top back! Let the cake sit on your counter until it reaches room temperature.
3- Now that our cake cooled down, You can serve as is, or make it look fancy…
4- I have a super cool cake stencil. I place it on top of the cake, and dust powdered sugar all over it…And when I remove the stencil, I have the most beautiful cake ever!!!
