324 – Moroccan Milk Bastilla Recipe / باستيلا الحليب

Ingredients :

 

  • MILK CREAM INGREDIENTS:
  • 2 cups (1⁄2 liter) whole milk
  • 3/4 cup (150 grams) granulated white sugar
  • 2 tablespoons cornstarch
  • 1 cinnmon stick + 4 whole cloves
  • 1 tablespoon orange blossom water
  • OTHER INGREDIENTS:
  • Warka sheets (or substitute with phyllo dough)
  • Vegetable oil for frying
  • Roasted almonds (chopped)
  • Powdered sugar and ground cinnamon for decoration

 

Directions :

 

Step 1: Preparing the Ingredients
1- Let’s chop these beautiful roasted almonds… You can also use any other nuts of your choice: roasted walnuts or pistachios or any crunchy nut you like!
2- Dissolve the corn starch with a little bit of the cold milk.

Step 2: Making the Milk Cream
1- In a saucepan, add the milk, the cinnamon stick, the cloves, and the sugar. Mix well with a whisk. Cook on medium heat.
2- Once the milk reaches a boiling point, remove the cinnamon stick and cloves.
3- Now add the dissolved corn starch while whisking… Continue cooking the milk on medium heat for another 5 minutes, keep whisking – very important -, until the milk mixture becomes creamy and thick. Now it’s ready.
4- Filter the milk mixture through a sieve to get rid of any chunks, and then add the orange blossom water… oh… this is MY FAVORITE flavor in the whole world!
5- Let the milk mixture cool down and let’s prepare the warka.

Step 3: Preparing the Warka
1- Here I am going to shape my warka into small disks. But it does not matter, you can just cut with scissors.
2- Here are my warka disks – if the warka you are using is too thin, you can stick 2 pieces together.
3- Heat some vegetable oil in a pan on medium heat, and once it’s hot, add the warka disks.
4- Fry them for one minute on both sides until they get a beautiful golden color.
5- Place the disks in paper towel to absorb excess oil.
Note: We have to serve this dessert now, right after frying the warka, when it is still warm!

Step 4: Serving:
First you place 2 pieces of fried warka, top them with the milk mixture, sprinkle some chopped roasted almonds, cover with 2 pieces of fried warka, then again milk mixture, chopped roasted almonds, then finally 2 more pieces of warka, a little bit of milk mixture and a touch of roasted almonds. Sprinkle some cinnamon … and powdered sugar…
Et voila!!! It’s ready…
