302 – Moroccan Hash Browns Recipe / بطاطس الهاش براونز المغربية
- 2 potatoes (around 1 pound / 500 grams)
- 1 teaspoon crushed garlic
- 1/4 teaspoon salt, 1/2 teaspoon pepper
- 1 large egg
- Vegetable oil for frying
Step 1 – Preparing the Potatoes:
1- Peel the potatoes. When you finish peeling a potatoe, place it in a bowl of water so it does not turn brown.
2- Using the large holes of a grater, grate the potatoes.
3- In a separate bowl, lightly beat the egg, salt, pepper, and garlic.
4- The final step is to squeeze the grated potatoes to get rid of the water they release, place them in a large bowl, add the egg mixture to them, and mix well.
Step 2 – Frying the Potatoes:
1- Place the oil in a pan and heat it on medium-high heat.
2- You can check if the oil is ready ready by putting a shred of potato in the pan – if it’s sizzling then you’re good to go.
3- Reduce the heat to medium and place little bits of potato mixture and fry from both sides until they become golden brown.
4- Place the fried potatoes in a plate covered with paper towel to absorb any excess oil.
5- Serve immediately (hot) with ketchup!
