121 – Moroccan Saffron Tea Recipe
- 3-4 cups of water
- 3 tablespoons of sugar
- 1 tablespoon of Chinese green tea (gunpowder)
- A pinch of saffron
1- Bring the water to a boiling point.
2- Place the green tea in the teapot and add a little bit of the boiling water. Mix well, then pour the water from the tea pot. This step is to wash out the green tea to remove any bitterness from the tea leaves before using them to brew the tea.
3- Add the sugar and saffron to the green team in the teapot.
4- Pour the boiling water in the teapot.
5- Return the teapot to the stove for few minutes on medium heat, until the water comes to a boiling point again. The purpose of this step is to caramelize the sugar and infuse the green tea and saffron.
6- Once the water reaches boiling point, mix the tea mixture by pouring some tea in a glass, and re-pouring the tea back in the teapot. Repeat for 3-4 times.
Serve immediately. Enjoy!
