Ingredients :
- 10 oz (284 grams) Graham crackers (or other butter cookies)
- 8 oz (227 grams) candied fruits or dried fruits (mango, cranberries, blueberries, raisins, etc.)
- 1 cup chopped walnuts (or roasted peanuts, almonds, etc.)
- 1 can (13.4 oz / 380 grams) of dulce de leche
- Dark chocolate (enough to cover the cookies)
Directions :
Step 1: Making the Cookie Mixture
1- Place the Graham crackers (or butter cookies) in a food processor and mix until you get a smooth cookie powder.
2- In a large bowl, mix the cookie powder with the chopped walnuts and dried fruits.
3- Add the dulce de leche to the mixture. Use your hand to mix all the ingredients until you get a smooth paste.
note: If you can not find Dulce de Leche, you can cook a can (without opening it) of sweetened condensed milk in pressure cooker filled with boiling water for 2 hours on medium-low heat and you will get dulce de leche!
Step 2: Rolling the Cookies
1- Separate the cookie mixture into 3 equal sized balls. Roll each ball into a long log.
2- Place the cookie logs in a baking pan covered with parchment paper and place in the fridge for a couple of hours. If you want to save time, place the logs in the freezer – it will cool faster (around 30 minutes).
3- After 30 minutes remove the logs from the freezer. Melt the dark chocolate and cover the top surface of the cookies logs with dark chocolate. Place the cookie logs in the freezer again for around 30 minutes until the chocolate becomes solid.
4- Remove the logs from the freezer once the chocolate is solid, roll them over to the other surface (that has not been covered with chocolate) and cover it with melted chocolate.
5- Place the cookie logs in the freezer again until all the chocolate is solid.
6- Once ready, cut the logs into thin slices (1/4″) and place the slices on a baking pan covered with parchment paper. Place the slices in the fridge until ready to serve.
7- You can place the slices in cookie tins and keep them in the fridge for up to 1 month.
