019 – Shrimp with Red Pepper Sauce
20 jumbo shrimp
3 red peppers
1/4 cup of chopped cilantro
1/2 teaspoon of pepper (to taste)
1/2 teaspoon of salt (to taste)
2 bay leaves
3 minced garlice cloves
2-3 tablespoons of olive oil
Slice the red peppers and grate them from the internal side (dispose the red peppers skin).
On medium heat, drizzle the oilve oil on your pan and cook the shrimp for 5 minutes.
Remove the shrimp from the pan. Saute the minced garlic in the same pan.
Add the grated red peppers to the pan. Add all the salt, pepper and bay leaves.
Let the sauce cook for 3 minutes.
Return the shrimp back to the pan and cook them in the sauce for 5-10 minutes.
Presentation: Serve the shrimp with the lemon cut in half and garnished with chopped cilantro.
