029 – Tarte Tatin

Ingredients :

  • 1 batch of sweet dough
  • 8 apples good for baking (i.e. Golden Delicious)
  • 1 cup of sugar
  • 1 tsp of lemon juice
  • 1/4 cup of water
  • 4 tablespoons of butter
  • 1/4 tsp of vanilla extract
  • 1/4 tsp of ground nutmeg
  • 1/2 tsp of ground cinnamon

Directions :

  1. Preparing the apples:
    1- Peel, cut in half, and core the apples.
    2- Cut each half of the apple in slices while keeping the half apple pieces combined (see video).
  2. Preparing the caramel:
    1- Combine the sugar, lemon juice, and water in an oven-safe pan and bring the syrup to boil on high heat.
    2- Once the syrup is boiling, reduce the heat and let it cook until it takes a deep golden color.
    3- Remove the pan from the heat and add the butter.
  3. Cooking the apples:
    1- Return the syrup to a low heat and add the apple halves around the pan edge and the center with the core facing up.
    2- Add the rest of the apples on top of the base apples (see video).
    3- Cover the pan and let the apples cook for 20 minutes or until they are cooked and you are able to poke them with a knife/fork.
    4- Once the apples are cooked, remove the lid from the pan and let them cook for another 10 minutes until the most of the juice is evaporated.
  4. Final Steps:
    1- Add the vanilla extract, ground nutmeg, and cinnamon to the apples.
    2- Roll the sweet dough on a circle.
    3- Remove the apples from the heat and cover the pan with the dough. Bring the dough edges into the center (see video).
    4- Put the pan in the oven and bake the Tarte Tatin for the next 20 minutes or until the dough is done.
  5. Note: Serve Tarte Tatin warm with vanilla ice cream.
