024 – Sweet Dough Recipe (Pâte Sucrée)

Very easy

Ingredients :

2 cups of flour
1/3 cup of sugar
2 large eggs
1 stick of cold butter (8 Tbsp)
1/4 tsp of salt
1/2 tsp of baking powder

Directions :

Mix all the dry ingredients together (flour, sugar, salt and baking powder)
Cut the cold butter into pieces and work it into the flour until it is fully incorporated.
In a separate bowl beat slightly the eggs, just enough to mix the yolks with the whites.
Mix the eggs with the dry mix.
Sprinkle some flour on a flat surface and work the dough until it becomes smooth.
Separate the dough into 2 batches.
Notes:
– Sweet dough can be frozen up to 2 months. Just make sure to put it in the fridge the night before you are planning to use it so it defrosts.
– Sweet dough is very forgiving when it comes to re-rolling. It actually stretches better the second time.
