025 – Walnut Honey Pie

Ingredients :

  • 1 batch of sweet dough
  • 2 cups of walnuts (or pecans)
  • 1 cup of honey (or corn syrup)
  • 3/4 cup of sugar
  • 3 large eggs
  • 6 tablespoon of butter
  • A pinch of salt

Directions :

Making the Syrup:

1- On low heat, combine the sugar and honey on a sauce pan and bring the mixture to boil without stirring.
2- Once the sugar and honey mixture reaches a boiling point, remove the sauce pan from the stove and add the butter. Stir the butter until it melts.
3- In a separate bowl, whisk the 3 eggs with the pinch of salt.
4- Add the honey and butter syrup to the eggs and continue whisking. Be careful not to overmix.
5- Let the syrup mixture cool down.

Rolling the Dough:

1- Sprinkle some flour on a flat surface and roll the sweet dough into a disk shape. Place it in the pie pan and trim the edges.

Note: Sweet dough is very forgiving when it comes to re-rolling. Actually, it rolls better the second time.

Final Steps:

1- Place the walnuts at the center of the pie.
2- Remove the foam from the syrup and slowly pour it in the center of the pie over the walnuts.
3- Preheat the oven at 350 degrees and bake the pie for 45 mn – 1 hour or until the dough is baked through and the center is set.
